Almost all of the world's makhana comes from a handful of districts in Bihar. The difference between an excellent pack and a disappointing one is set long before the seasoning goes on.
Grading
Fox nuts are graded by diameter. Larger, more uniform grades puff evenly and stay crisp — which is why we buy on grade rather than on price alone.
Moisture control
Makhana absorbs moisture readily. Controlled drying before roasting, and a proper barrier pack after it, are what keep the crunch through a monsoon.
Roasting and seasoning
We roast in small batches with little or no oil, then season warm so the spice adheres without going soggy.
Buying in bulk
For distributors and food brands we supply sorted raw and roasted lots with grading documentation. Tell us the grade and volume and we will quote against it.
